Muted lights, dark wood furniture? Check. A name so cute and whimsy you need a cat in your life, stat? Check. Instagram-worthy waffles from almost every angle? Check. Proof that you shouldn’t trust everything you see on Instagram? A hundred times yes.
I had such high hopes for the Charcoal Waffle with Salted Egg Yolk Sauce at FATCAT after seeing pictures of it flood my Instagram feed. I mean, aren’t you aching for a bite just looking at the picture above? Alas, that gorgeousness didn’t quite translate to yumminess; if not for the scoop of pistachio ice cream we added, the entire experience would have been a disappointment thorough and through.
For one, the salted egg yolk sauce tasted nothing like the smooth creamy goodness of a liu sha bao. Instead, it was lumpy with bits of salted egg yolk still visible. And don’t get me started on the charcoal waffle. Granted, the crispy-outside, fluffy-inside texture of the waffle was a delight paired with the pistachio ice cream, but the taste of the waffle itself screamed, “Did someone forget the sugar? Or the buttermilk? Why the heck do I taste so bland?!”
Thank goodness for the pistachio ice cream.
At $4.50 a scoop, the Pistachio is pretty pricey especially if you consider that the plain charcoal waffle only cost $6. But the money was worth shelling (ha!) out for; deliciously nutty yet not too sweet, the ice cream alone was worth the visit. Other ice cream flavors we sampled included the Earl Grey Lavender and Butterbeer. The former, imbued with lovely floral notes, was light and refreshing while the latter, though malty and creamy, could have used more of an alcoholic kick.
Admittedly, one good thing about FATCAT is that almost every dish that comes out of the kitchen can do no wrong in the #foodporn obsessed world of Instagram. So while I may be choking down my disappointment, at least my #charcoalwaffle post is killing it.
